Chickpea Tofu & Soyrizo Breakfast Burritos
(Makes 3 Breakfast Burritos)
½ Package of El Burrito Soyrizo
½ Package of Franklin Farms Chickpea Tofu, cut into small cubes
2 Tablespoons of Olive Oil
Burrito Size Tortillas
¼ Cup Vegan Shredded Cheese
1 Avocado, diced
Salsa
In a large skillet add 1 tbsp oil and heat over medium heat. Add Soyrizo and sauté for 2 minutes while breaking the product into a ground texture. Add Chickpea Tofu and combine both ingredients together. Cook for an additional 3 minutes until mixture becomes slightly crisp.
Microwave the tortillas for a few seconds (easier to fold when warmed). On a flat surface, add vegan cheese and a couple scoops of the burrito mixture and top with avocado and salsa. Fold the sides of the tortilla inward and then continue to fold the burrito together.
In another skillet over medium heat, add remaining oil and place the burritos into the skillet. Brown on each side for about 2 minutes. Remove from the pan and cut in half. Enjoy as is or create a loaded burrito and add more toppings. Enjoy!
