Cuban Style Black Bean Balls
Serves 3
1 Package of Franklin Farms Cuban Style Black Bean & Plantain Balls
1 can of Black Beans, drained
1 Cup of Jasmine Rice, prepared according to package directions
Small handful of cilantro, chopped
1 Plantain, cut into 0.5”-0.75” thick pieces
Before frying the plantains, gently smash each slice with the bottom of a cup (this will help the plantains to become extra crispy!). Add 3 Tbsp of oil in a non-stick skillet and pan fry the plantains on low heat until the outside turns crisp. Transfer to a paper towel to absorb excess oil and sprinkle with sea salt.
Prepare balls and rice according to package directions. Once rice is finished cooking, add one can of the drained black beans, cilantro and stir to combine. Serve balls with the rice & beans paired with the side of fried plantains.
