Edamame Salsa
1 Package of Franklin Farms Shelled Edamame, cooked according to package directions.
1 Cup of Black Beans, rinsed
1\2 Cup Corn (we used fire roasted. You can find it in the freezer aisle. Make sure to thaw it first)
Small wedge of red onion, diced (add more onion if prefer more)
1 Small jalapeno, seeds removed and diced
1\2 of a Large Tomato, diced
Juice of 1 Lime
1\3 cup Olive Oil
1 Clove of garlic, minced
1\2 teaspoon of Cumin
6-8 sprigs of cilantro, chopped
Salt and Pepper to taste
Add all ingredients to a large bowl and combine. Let salsa sit in the refrigerator for 30 minutes to an hour before serving.
