Chickpea Tofu ‘Egg Salad’
1 Package of Franklin Farms Chickpea Tofu, cut into small cubes
½ Cup of Plant-Based Mayo
2 Tablespoons of Yellow Mustard
¼ of a Red Onion, diced
2 Celery Stalks, diced
1 Teaspoon of Garlic Powder
1 Teaspoon Dried Dill
Salt & Pepper to Taste
Optional:Dash of turmeric for color
Sprinkle of Everything But the Bagel Seasoning
Combine all ingredients in a bowl and mix to combine. Gently mash the chickpea tofu while keeping the larger chunks for texture. Enjoy as a sandwich, lettuce wrap or with crackers for a quick snack!
